Traditional NM Enchilades

Last night I made one of my favorite dishes. Red Chile Enchiladas. I don’t know if you’ve ever been to NM but our food is very unique. The chile is fresh red chile that has been sun dried, soaked in water and blended with fresh garlic. I strained and then cooked it in a pot with more garlic, salt, and a bay leaf. It’s so so tasty. To assemble this beauty you just fry some corn tortillas, dip them in the chile throw some cheese on top and more chile then put under the broiler. When its all melty and cheesy I throw a delightfully greasy fried egg on top and some romaine lettuce and tomato on the side.

    Yum, yum, yum! A local favorite indeed! Breakfast, lunch or dinner – these make for a fantastic New Mexican meal! Yours in particular look DELICIOSO!!
